Sanjeev Kapoor's Khazana Kadhai Masala
Spice mix contains coriander, tomato powder, red chili, fennel, cumin and other spices.
Directions to use:
1.Boil three cups of uniformly cut vegetables of your choice until three-fourths done.Heat two tbsps of oil in a pan and saute two tbsps each of ginger and garlic paste for a minte. 2.Add one cup of tomato puree and cook till the oil separates. 3.Add two tbsps of Khazana Kadhai Masala and mix. 4.Add par boiled vegetables, salt to taste and cook till vegetables are done. 5.Remove from heat, sprinkle one tbsp of Khazana Kadhai Masala again and leave it covered for five minutes. 6.Uncover, mix the vegetables properly, sprinkle freshly chopped coriander leaves and serve hot.
