        These leaves, known as Malabathrum, or Malabar leaves, and are often erroneously called Indian bay leaves. Though they look similar to the Bay Leaf of the laurel leaf, these leaves are quite different in taste and aroma. True tejpatta leaves such as this impart a strong cassia- or cinnamon-like aroma to dishes, while the bay leaf's aroma is more reminiscent of pine and lemon.

        In North Indian cuisine, liberal use is made of sweet spices such as Indian bay leaves; two specialties are most common: the complex rice dish called biriyani and the rich korma dishes in which meat is slowly braised in a rich, fragrant sauce thickened with ground almonds and scented with Indian bay leaf.           FINALLY!! Everything I have been able to find locally has been bay laurel, the European bay, even when labeled "Tej Patta". The only real tej patta I have been able to find for several years has been in whole garam masala, also from Nirav. But these are the REAL THING!! The flavor is so totally different. REAL tej patta can be differentiated from false by the presence of three longitudinal veins on each leaf. Bay laurel has only one. I ordered this with fresh curry leaves; the package arrived in a few days (very quickly) and the fresh leaves were in great shape. Finally being able to get a supply of REAL tej patta is exciting to me as I LOVE the flavor. Thanks so much, iShopIndian!
