This unmistakable spice is shaped like a star and has a strong smell and flavor of a stronger aniseed, mixed with a pungent licorice. In the center of each petal-shaped pod is an oval seed, light brown and shiny. Its widest Indian use is in Kashmir and Chettinad cooking, and in parts of western India, like Goa. Star Anise is a primary ingredient in the Chinese Five-Spice powder, and is often added whole to dishes of braised meat and poultry. The star may be removed prior to serving, although in the East, whole spices such as cinnamon, cloves and star anise are left in the dish, and are simply pushed to the side when ready to eat.
