This special variety of Red Rice is known as "Payasam Rice" for its popular use to make "Payasam," a sweet, lightly spiced rice dish. The rice is cooked until tender, then cooked with melted jaggery (unrefined sugar), coconut milk, ghee, ground cumin, cardamom and ginger powder.
