Kulfi is the Indian ice cream without eggs. It is made with milk and flavored with almonds, pistachios and saffron. It has a slightly harder texture than regular ice cream, and has an intense sweet and nutty flavor. They can molded into any shape, and muffin baking pans are an excellent substitute.
