This fine, white flour is extracted from the roots of a tropical plant with arrow-shaped leaves. It is very useful as a thickener like cornstarch in sauces and glazes and also as a binding agent. It is tasteless, and the fine flour becomes clear when it is cooked. It is wheat free and gluten free.
