Asafoetida, also known as "Hing," is an important spice in Indian cuisine. In its raw, uncooked form it has an unpleasant flavor, but once cooked, it has bright and refreshing garlicky/onion flavor. Its flavor is important in Indian vegetable dishes and helpful in lentil and bean dishes to help the stomach process easily.
Asafoetida is extremely potent, so use in small pinches.
